Meet Salimbado Coffee, where Indonesian robusta and gambir-derived catechins come together in a distinctive approach to fermentation.

OUR COFFEE STORY

Indonesian robusta, gambir-derived catechins, and a closer look at the decisions that shape a cup.

Long before the aroma rises from freshly brewed coffee, its character has begun to take shape. Harvesting, fermentation, drying, and roasting each leave something behind. What we taste is the result of those decisions coming together.

At Salimbado Coffee in West Sumatra, our work begins with Indonesian robusta. We explore its character through fermentation with the addition of catechins derived from gambir (Uncaria gambir), bringing two Indonesian ingredients into one approach to coffee processing.

A Distinctive Beginning

Catechins are familiar to many people through tea, but gambir offers another botanical source. Introducing gambir-derived catechins during coffee fermentation gives us a particular direction to investigate: how this treatment influences the character of robusta after processing, roasting, and brewing.

Research has examined crude gambir catechin extract in instant robusta formulations, reporting changes in phenolic content and laboratory antioxidant activity. Those findings provide a starting point for further exploration, although they do not establish the same results for Salimbado’s finished coffee.

Our distinction lies in the process we are developing. Its value has to become clear in the cup.

Looking Beyond the First Impression

An intense aroma can draw someone in. The rest of the cup determines whether they stay.

We work towards a robusta with satisfying body, balanced bitterness, and a pleasant finish. This means paying attention to more than the strength of the first sip. How does the coffee feel across the tongue? Does a drying sensation linger? Is the finish enjoyable enough to invite another sip?

These questions matter when working with catechins, which can themselves contribute bitterness and astringency. Their addition does not automatically make coffee smoother; the complete process needs careful evaluation.

For us, a distinctive ingredient creates a reason to investigate. Tasting helps determine whether that investigation has produced something worth drinking.

From West Sumatra to Your Way of Drinking

A coffee takes on another life when it reaches someone else’s kitchen or café.

One person may enjoy it black, paying attention to its texture and finish. Another may prefer it with milk. A roaster may see an opportunity to explore different roast profiles, while a café may begin with a familiar recipe and adjust it through tasting.

We welcome those interpretations. For cafés and roasteries in China, Salimbado offers a starting point for shared evaluation and product development. Samples and tasting notes allow a more useful conversation about what the coffee can bring to a menu.

For individual drinkers, the invitation is simpler: discover an Indonesian robusta with a particular story behind its processing, and decide how you enjoy it most.

Salimbado Coffee begins with ingredients and decisions made close to home. The next part of the story happens wherever the coffee is brewed.

Try it with curiosity. Let your own experience bring you back.
